WOW! This is probably the most potent flavour of anything I've ever tasted. Albeit, the version I've had of this was actually a form of soup, however, it can easily be translated into a froster de la perfection.
There are a lot of ingredients that sound like they wouldn't work given the context we're putting this in, and some that just wouldn't work at all.
So given the nature of this contest, and common sense, this is what I present to you:
Sweat carrots and leave them to soak in their own juices for some time. Then take freshly squeezed or sweet concentrated orange juice frozen into cubes and blend them together. (Orange syrup would also work) Add orange zest and coriander. Separately, crystallize ginger and give it a sugar coating.
The blended mixture should be very consistent and contain very little pulp. Increase the amount of orange juice until this is achieved. Once you have the blended mixture and the crystallized ginger, combine the two together.
Optionally, mirepoix can be used, but this may not work well. If crystallized ginger cannot be used, try using a very concentrated gingerale syrup. In the original conception sea salt, white wine and sherry are used, but this wouldn't work well (for taste reasons and for obvious legal reasons). So we're not even gonna to go there.
Despite it's omission this should still translate well as a froster. The sheer power of the carrots, oranges and crystallized candied ginger alone work together so beautifully that the subtlety of the omitted ingredients shouldn't affect its quality.
In terms of portions, the final product should have double the amount of orange juice than there is carrot, if not more depending on the tartness of the carrot. The carrot merely complements the flavour and adds oomph. The amount of ginger should be about one tablespoon per 5 cups of blended mixture. The power of the flavour is derived mostly from the orange (which is why freshly squeezed or sweet orange syrup is a must), and the candied crystallized ginger.
The colour of this splendeur is most undoubtably a very moderate orange. Slightly darker than your ordinary orange froster flavour.
